Recipe for Gingerbread Pumpkin Pie

In case you happened to miss it, I waxed eloquent about my adoration for the flavour of pumpkin, specifically pumpkin pie, in a post I wrote earlier this month. Now that Thanksgiving weekend is here (yes, we Canadians celebrate Thanksgiving this weekend!) I figure it’s time for me to put my money where my pumpkin-loving mouth is, and share a favourite recipe with you.

Gingerbready Punkin Pie - from the kitchen of Laurel Regan at Alphabet SaladWhile I absolutely adore plain ol’ pumpkin pie, either on its own or with a little whipped cream, sometimes it’s fun to mix things up a little… and this Gingerbread Pumpkin Pie does just that. It’s pumpkin pie with a subtle spicy-molasses kick, and it’s mouth-wateringly delicious (if I do say so myself).

I must confess up front: my baking skills aren’t advanced enough for me to have developed this recipe from scratch. Years ago I found a basic recipe I liked (I couldn’t even say where it was from, unfortunately, as it’s been that long) and tweaked the ingredients until I was happy with the end result.
